【日経MJ】飲食業調査で判明したあの会社のFC店売上高は？

毎年５月後半に日経MJが飲食業調査の結果を公表しています。この調査は今年で４４回になるのですが、その調査結果について、独自情報と解説を追加しつつまとめてみました。

この調査内容から一部だけ紹介します。

店舗売上高伸び率ランキング

店舗売上高伸び率のランキングです。

店舗売上高伸び率ランキングの１位は、いきなりステーキを展開するペッパーフードサービスかなと予想していましたが（前年の伸び率は38.5％）、ゴリップとDDホールディングスがペッパーフードサービスを上回る成長率でした。

※ 2013年のいきなりステーキは１店舗、2017年末は188店舗

DDホールディングスがこの位置に付けたのは、新規出店数が多かったからです。いきなりステーキを展開するペッパーフードサービスも出店数を伸ばしましたが、DDホールディングスの出店数には及ばなかった。

ちなみに、かつて世間を賑わせた俺のイタリアンや、俺のフレンチなどを展開する俺の株式会社が、売上高伸び率のランキング外だったので、独自にリサーチしてみました。

すると、2017年度売上高9,816百万円で、2016年度の売上高は9,968百万円、伸び率は▲1.5％でした。それでも売上は約100憶あります。

FC店１店舗あたりの売上高は？

日経MJの飲食業調査ではFC１店舗あたりの売上高までは掲載されていないのですが、参考資料は掲載されていないので、独自に計算してみました。

※ ランキングしているリンガーハットには直営店がないことになっていますが、連結子会社にリンガーハットジャパンという会社があり、リンガーハットジャパンには445店舗の直営店があります。

俺の株式会社のFC１店舗あたりの売上高は約2憶5,000万あります。直営店も1店舗あたり約2憶6,700万円あり、この数字は際立って目立ちます。

一時期のブームは過ぎたかもしれませんが、着実に足元は固めているのかも。

俺の株式会社が公表している店舗データを独自で集計したところ、俺系の店舗は1店舗平均80席なので、1席あたり年間約333万円（2憶6,700万円÷80席）、1カ月あたり約28万円/席を売り上げています。

1坪あたり2席を設けているとすると、坪当たりの売上高は約56万/月なので、1店舗あたりの平均売上が2憶5,000万円前後という数値も、架空売り上げを計上しているというわけでもなさそうです。

因みに、俺系のお店は、松山店以外は全席禁煙らしい。

スタ丼を展開するアントワークスののFC1店舗あたりの売上高は、約2,000万強。この数字は厳しいと思います。

話は変わりますが、直営店舗数とFC店舗数を見ると、会社の思惑がわかります。例えばサーティワンなど、FCの店舗数が多いのは、自分たちで自ら店舗を運営するのではなくて、あくまでもロイヤリティを中心に稼ぐスタイル。

直営店は、アイスの販売以外に、研修や、トレーニング、テスト・マーケティングなどで使用する。

FC店舗の少ない会社は、自らバリバリと飲食店を経営するスタイル。まさに本来の飲食業です。

どちらのスタイルが良いかは経営者の判断によると思いますが、FC展開は、基本的に元締めが美味しいと思います。
